Description

Arugula, also known as rocket, is a fast-growing, annual leaf vegetable from the mustard family. The tender, young leaves have a peppery taste. The older leaves become more bitter. Arugula is rich in vitamins A and C and is a good source of folic acid, calcium, and potassium. The plant is also a source of glucosinolates, a group of compounds that have been shown to have cancer-preventing properties.

Growing Details

Arugula is a cool weather crop and can be planted as early as 2 weeks before the last frost in spring. The seeds should be sown ยฝ to 1 inch deep in rows that are 18 to 24 inches apart. When the seedlings are 4 to 6 inches tall, thin them to 8 to 10 inches apart. Arugula will bolt (flower and go to seed) in hot weather, so it is best to plant it in the spring and again in the fall.
